The festival will take place September 24 – 30, 2018, and each night you’ll get to experience a different theme of delectable cuisine and drinks. The festival will be taking place at the gorgeous Ocean Riviera Paradise – All-Inclusive All Suites Resort in Riviera Maya. In addition to the carefully curated cuisine and cocktails, enjoy celebrity chef and mixology demonstrations, wine panels hosted by top sommeliers in the industry, seminars on trending topics led by industry leaders, an intimate meet and greet cocktail with the chefs and after hours parties, live music and more. The Paradise Food and Drink Festival Schedule of Events:

Monday – French Mexican Cuisine

The “Godfather of the Grill,” Ted Reader of Teddy’s BBQ Sandwich Shop and professor at the Canadian Food and Wine Institute at Niagara College will be firing up the grill for some award-winning BBQ on the main beach for lunch. In the evening, join chefs Julian Alonzo, Northeast Regional Chef at Google, New York City and José Bossuet, Executive Chef at Cafe Contento in Mexico City, for an evening of delicious French Mexican fusion. Enjoy four courses of incredible French Mexican favorites; such as, Lightly Cured Scallops and Aged Duck Breast. On Monday you can also catch cooking demonstrations by Stefano LaCava, Miami Scene Food Group founder, and Greg Sharpe, Executive Chef of Gaylord National Resort in National Harbor, Maryland.

 

Tuesday – Sea and Sun Cuisine

At lunch time, enjoy some tasty Yucatan BBQ featuring the Ocean Coral & Turquesa Culinary Team Led by Executive Chef Edgar Tapia. For dinner, chefs Cynthia Hutson, Chef Owner at Ortanique on the Mile in Coral Gables, FL, and Greg Sharpe, winner of over 35 culinary medals and the designated state chef of Maryland, have an evening of Sea and Sun cuisine in store. The four-course dinner includes delicious dishes like Seared Pork Mole and Banana Leaf Steamed Snapper. Also, check out demonstrations by Sue Torres of the Mezon Tapas Bar in Danbury, CT and Graciela Montaño from Tu Cocina on Channel 11 in Mexico City.

 

Wednesday – Modern Mexican Cuisine

Festivities kick off at 12:30pm with “Dr. BBQ,” Ray Lampe who will be hosting a Beach BBQ Taco Fiesta on the main beach! Author of 10 cookbooks and 2014 BBQ Hall of fame inductee, “Dr. BBQ” will share some of his secrets of mastering the grill. The four-course signature pairing theme for Wednesday is Modern Mexican Cuisine. Join highly publicated chef Sue Torres of Mezon Tapas Bar in Danbury, CT, and Lula Martín Del Campo, Gourmand World Cookbook Award Winner, for decadent Mexican favorites like Sopes de Camarones and Lobina con Esquites. Enjoy demonstrations from Sean Bernal, Chef de Cuisine at the Islander at Ocean Reef Club in Key Largo, FL, and Jorge Valencia of Travel Channel Mexico and Executive Chef at La Sazón de Tlalpan in Mexico City.

 

Thursday – Modern Latin Cuisine

For lunch, enjoy Riviera Mayan BBQ featuring the Ocean Maya Royale Culinary Team led by Executive Chef Fabian Chavez. Later, join chefs Sean Bernal of the Islander at Ocean Reef Club in Key Largo, and Jorge Valencia, host of “Sazón de mi Tierra” on the Mexican Travel Channel, for an evening of Modern Latin Cuisine. Enjoy modern favorites like Ceviche Tropical Mixto and Roasted Mango Pavlova. Demonstrations on this day will be provided by Cynthia Hutson, Executive Chef of Ortanique on the Mile in Coral Gables, FL and Zest at the Cliff in Negril, Jamaica.

 

Friday – Modern American Cuisine

Once again, “Dr BBQ,” Ray Lampe will break out the grill! This time he’ll be serving up some Good Ole American BBQ for lunch, followed later by four courses of Modern American Cuisine with chefs Stefano LaCava, former member of the US Culinary Olympic Team, and Angel Betancourt, Executive Pastry Chef at The Ocean Club, a Four Seasons Resort in Paradise Island, Bahamas, for dinner. They’ll be serving up American favorites like Casino Studded Shrimp and Braised Short Ribs. Don’t miss out on the exhilarating demonstrations being led by José Bossuet, Executive Chef of Café Contento in Mexico City, and Julian Alonzo, Northeast Regional Chef at Google, NYC.

 

Saturday – Modern Italian Cuisine

Kick off the final day of festivities with Riviera Mayan BBQ featuring the Ocean Riviera Paradise Culinary Team led by Executive Chef Alan Ramirez. Later, join chefs Debbie Gold, James Beard Award Winner, and Jason Stanhope, awarded Best Chef by JBA Foundation in 2015, for an evening of Modern Italian Cuisine. Enjoy Italian favorites like Lamb Canneloni and Butterscotch Budino! Don’t forget to check out the demos being led by Graciela Montaño from Tu Cocina on Channel 11 in Mexico City and Debbie Gold, Executive Chef of Tied House in Chicago, IL.
